  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature for topping
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat the oven to 350°F and prepare a 9” square baking dish by greasing it and lining it with parchment paper.
  2. In a large sauté pan, boil 1-½ cups of fresh apple cider until reduced by half (about 5 minutes). Measure to ensure you have ¾ cup remaining and whisk in diced butter until melted.
  3. In a medium bowl, whisk together eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, ground cinnamon, allspice, and salt. Gradually add the reduced cider mixture.
  4. Fold in 1-¾ cups of all-purpose flour until just combined.
  5. Pour the batter into the prepared baking dish and bake for 22–25 minutes or until puffed and golden.
  6. Let cool briefly before brushing with butter and sprinkling with a cinnamon-sugar mixture.
