  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14 ounces) diced tomatoes (with juices)
  • 1/2 cup vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar or Mexican blend cheese
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté diced onion for 3–4 minutes until softened. Add garlic, sweet potatoes, and red bell pepper; cook for 8–10 minutes until sweet potatoes begin to soften.
  3. Stir in black beans, diced tomatoes (with juices), vegetable broth, chili powder, cumin, smoked paprika, salt, and black pepper.
  4. Cover and simmer for 10–12 minutes until sweet potatoes are tender and the mixture thickens.
  5. Sprinkle shredded cheese on top and cover again; cook for 2–3 minutes until melted.
  6. Serve garnished with fresh cilantro alongside tortillas, rice, or chips.
