  • 1012 medium sweet potatoes, peeled & thinly sliced into medallions
  • ½ cup unsalted butter
  • ½ cup brown sugar (light or dark)
  • 1 cup water
  • 2 tsp ground cinnamon
  • 2 tsp ground cloves
  • 2 tsp ground nutmeg
  • ½ tsp salt
  • ½ cup chopped pecans (or walnuts), toasted
  • 1 cup mini vegan vegan marshmallows

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. Layer half of the sliced sweet potatoes in the dish.
  3. In a saucepan over medium heat, melt the butter and stir in brown sugar, water, cinnamon, cloves, nutmeg, and salt until slightly thickened (3–5 minutes).
  4. Pour half of the caramel sauce over the sweet potatoes. Add remaining slices on top and pour remaining sauce over.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil, sprinkle with pecans and mini marshmallows, then bake uncovered for another 10–15 minutes until golden.
  7. Allow to rest for 10 minutes before serving.
