  • 2 large chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Olive oil (for frying)
  • Fresh basil or parsley (for garnish)

Instructions

  1. Cook the pasta according to package directions until al dente; drain and set aside.
  2. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  3. Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one mixed with breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  4. Coat each chicken piece in flour, dip in the egg mixture, then press into the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium-high heat and fry the chicken for 3–4 minutes per side until golden brown. Transfer to the baking sheet and bake for an additional 10 minutes until fully cooked (internal temperature should reach 165°F/74°C).
  6. In a large baking dish, mix cooked pasta with marinara sauce and remaining Parmesan cheese. Place crispy chicken on top and sprinkle with mozzarella cheese.
  7. Bake for 15–20 minutes until cheese is melted and bubbly.
  8. Garnish with freshly chopped basil or parsley before serving warm.
