Chickpea Gingerbread Buckeyes are a delightful twist on a classic treat, combining the rich flavors of gingerbread with the health benefits of chickpeas. These bite-sized desserts are not only easy to prepare but also packed with plant-based protein and fiber, making them a guilt-free indulgence perfect for any occasion.

Ingredients

  • 1 cup canned chickpeas (drained and rinsed)
  • 3/4 cup natural creamy peanut butter
  • 1/3 cup powdered sugar
  • 1/4 tsp sea salt
  • 2 Tbsp molasses
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1 cup semi-sweet chocolate chips
  • Turbinado sugar for garnish

Instructions

  1. In a food processor, blend chickpeas until finely ground. Add peanut butter, powdered sugar, molasses, cinnamon, ginger, and sea salt. Blend until smooth.
  2. Roll the dough into 12 to 14 balls (about 1.5 Tbsp each) and place on a parchment-lined baking sheet. Chill for 15 to 20 minutes.
  3. Melt chocolate chips in a microwave-safe bowl at 30-second intervals until smooth.
  4. Dip each buckeye in melted chocolate and return them to the parchment paper. Sprinkle with Turbinado sugar if desired and refrigerate until set.
