  • 1 can (8 ounces) refrigerated cinnamon roll dough
  • 1 tablespoon melted butter
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1/4 cup brown sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)
  • 2 tablespoons melted butter (for swirl)
  • Icing from the cinnamon roll package or 1/2 cup powdered sugar mixed with 1 tablespoon milk (for glaze)

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and line it with parchment paper.
  2. Roll out the cinnamon roll dough and press it into the bottom of the pan. Brush with melted butter.
  3. In a mixing bowl, beat cream cheese, granulated sugar, and brown sugar until smooth. Add eggs one at a time, mixing after each addition. Stir in vanilla extract, ground cinnamon, sour cream, and heavy cream until creamy.
  4. Pour half of the cheesecake batter over the crust. Mix together brown sugar and ground cinnamon for the swirl; drizzle half over the batter and swirl gently with a knife. Repeat with remaining batter and swirl mixture.
  5. Bake for 55–65 minutes or until slightly jiggly in the center. Cool in the oven with the door ajar for an hour before chilling in the refrigerator for at least 4 hours or overnight.
  6. Before serving, drizzle with icing or prepared glaze.
