  • 300g rotini pasta (or any short pasta)
  • 2 diced chicken breasts
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Boil salted water in a large pot and cook the rotini according to package directions. Add broccoli florets in the last three minutes of cooking. Drain and set aside.
  2. In a large pan over medium heat, add olive oil and diced chicken. Cook until golden brown on all sides.
  3. Stir in minced garlic and sauté for one minute until fragrant.
  4. Pour in heavy cream and chicken broth; stir in grated Parmesan along with salt and pepper. Allow to simmer until slightly thickened.
  5. Combine cooked pasta and broccoli with the creamy sauce, tossing until evenly coated.
  6. Serve warm, garnished with extra Parmesan and fresh parsley if desired.
