  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 8 oz mushrooms, sliced (cremini or button)
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons cornstarch
  • 4 tablespoons water

Instructions

  1. In a heavy-bottomed pot or Dutch oven, heat oil over medium-high heat. Brown the beef chunks in batches until golden on all sides. Remove and set aside.
  2. In the same pot, add more oil if necessary and sauté the chopped onion, carrots, and minced garlic for about 5 minutes until softened.
  3. Return the browned beef to the pot along with sliced mushrooms, beef broth, tomato paste, and thyme. Bring to a simmer.
  4. Reduce heat to low and cover; let it simmer gently for about 2 hours until the beef is tender.
  5. Optional: For a thicker stew, mix cornstarch with water in a small bowl and stir it into the stew during the last 10 minutes of cooking.
