  • 2 tbsp Dijon mustard
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 tbsp unsalted butter
  • Olive oil
  • Salt and pepper
  • 1 tbsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 1/4 cup milk (or cream)
  • 1/4 tsp ground nutmeg

Instructions

  1. Boil the butternut squash in salted water until tender (about 15 minutes). Drain, then mash with butter, milk, salt, and pepper until smooth. Keep warm.
  2. In a bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Season the beef chops with salt and pepper. Sear for 3-4 minutes per side until golden brown.
  4. Pour the maple glaze over the chops; reduce heat and simmer for 5-7 minutes until the glaze thickens and the internal temperature reaches 145°F.
