  • 1 large red onion
  • 1 pint cherry tomatoes
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar, packed
  • 2 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup water

Instructions

  1. In a mixing bowl, whisk together olive oil, salt, black pepper, ketchup, apple cider vinegar, brown sugar, chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, and water.
  2. Add chicken cubes to the marinade; coat well. Cover and refrigerate for at least 30 minutes.
  3. Thread marinated chicken and vegetables onto skewers.
  4. Preheat grill to medium-high heat (375°F). If using wooden skewers, soak them in water for 20 minutes.
  5. Grill skewers for 15–20 minutes until chicken reaches an internal temperature of 165°F. Turn occasionally for even cooking.
  6. Let rest briefly before serving with chopped cilantro and lime wedges.
