  • 8 oz uncooked penne pasta
  • 1/2 cup low-sodium chicken broth

  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat.
  2. Add chicken pieces, seasoning with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown and cooked through; remove from skillet.
  3. Deglaze the pan with low-sodium chicken broth, scraping up browned bits.
  4. Stir in honey BBQ sauce (and soy sauce if using); let simmer for 2–3 minutes.
  5. Add uncooked penne and enough water to barely cover the pasta (about 1 to 1½ cups). Cover and simmer for 12–15 minutes until pasta is tender.
  6. Return chicken to the skillet; stir to combine and let simmer for an additional 2–3 minutes.
  7. Adjust seasoning as needed; serve hot.
