  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 lemon, halved
  • 4 cloves garlic, smashed
  • Fresh herbs (rosemary, thyme, parsley)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil over the chicken and season generously with salt, pepper, garlic powder, onion powder, and paprika.
  4. Stuff the cavity with halved lemon pieces, smashed garlic cloves, and fresh herb sprigs. Tie the legs together with kitchen twine.
  5. Place the chicken breast-side up on a roasting rack in a large pan. Roast for approximately 1 hour and 15 minutes to 1 hour and 30 minutes until the internal temperature reaches 165°F (74°C). Baste once or twice during cooking.
  6. Let the chicken rest for about 10–15 minutes before carving.
