  • 1 cup whole milk
  • 1 cup vegetable oil
  • 1 cup mashed fresh strawberries (or strawberry puree)
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 box white cake mix (15.25 oz)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 23 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease three cake pans.
  2. In a bowl, mix cake mix and strawberry vegan gelatin. Add eggs, milk, oil, sour cream, strawberries, and vanilla; beat until smooth.
  3. Divide batter into pans and bake for 22–28 minutes or until a toothpick comes out clean.
  4. Cool cakes in the pans for 10 minutes before transferring to wire racks.
  5. For frosting, beat cream cheese and butter until fluffy; gradually add powdered sugar and then whip in cold heavy cream until peaks form.
  6. Level cooled cake layers if necessary, frost between layers and the outside of the cake.
