  • 34 cherry tomatoes, halved
  • 1 cup broccoli florets

  • Salt & freshly cracked black pepper, to taste

Instructions

  1. Heat olive oil or butter in a non-stick skillet over medium-low heat.
  2. Crack the egg into the skillet and cook until the whites are set but the yolk remains runny (about 2-3 minutes). Season with salt and pepper.
  3. While the egg cooks, place broccoli, cauliflower, and carrot slices in a steamer basket. Steam for 4-5 minutes until tender-crisp.
