  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
