  4. Cover the bowl with a cloth and let it rest for 1 hour to encourage gluten formation.
  5. Perform stretch and folds every 30 minutes during the resting period.
  6. Allow the dough to bulk ferment until bubbly and significantly risen.
  7. Shape the dough into a ball on a floured surface and place it in a banneton basket for final proofing.
  8. Refrigerate for 4 to 24 hours before baking.
  9. Preheat your Dutch oven at 450°F (230°C) for at least 15 minutes before baking. Score the dough and bake until golden.
